A path reads one value. To get one row per element of an array, join the table to FLATTEN:
SELECT src:order_id::STRING AS order_id, f.value:sku::STRING AS sku
FROM raw.orders_json,
LATERAL FLATTEN(input => src:lines) f;
FLATTEN returns a row for each element, with columns VALUE (the element), INDEX (its position), KEY (for objects) and a few more. LATERAL lets it read the row it's joined to.
Two things catch people out. First, a document whose array is empty gives no rows at all, so it vanishes from the result. Add OUTER => TRUE to keep it, with NULLs in the flattened columns. Second, nested arrays need a second FLATTEN that reads the first one's value.
FLATTEN works on objects too: each key becomes a row, with the key name in KEY.
